So what do you do when you buy a huge hunk of salmon and a package of three cantaloupes? I made cantaloupe salmon. Add a little balsamic vinegar and cover for 25 minutes at 350. Then uncover and sprinkle brown sugar for five minutes more. On a part of it, I added some salt, pepper, and onion for the adults to eat. I was toying with using a hot spice, but I ate a really hot pepper yesterday. I was not eager to blow out my spicy senses today. It is a dish even the kids will eat with no fuss.
